PURPOSE OF THE UNIT STANDARD 
Each learner must be able to prepare room service in a hygienic, competent and organised manner.
The learner must understand the importance of preparing the Room Service area within determined time frames in order to maximise customer satisfaction

Demonstrated knowledge and understanding. 
OUTCOME NOTES 
1. Explain the interrelationship between completing preparation tasks within time limits and customer satisfaction.

2. Explain the importance of maintaining a constant stock of service equipment items.

3. Explain the consequences of not checking and storing condiments and accompaniments according to operational procedures.

4. Identify food service items and state organisational procedures for handling, cleaning and storing them.

5. Stress the importance of ensuring all service equipment is clean, undamaged and always in its place.

6. State organisational procedures for the laying and clearing of trays and trolleys.

7. Explain the importance of handling and disposing of waste in a hygienic way.

8. Stress the consequences of not turning off certain electrical equipment after service.

  • This unit standard can be assessed by a combination of observation, questioning, simulation and product sample.
  • Observation to cover two types of laying of trays and trolleys covers. Question the other types of covers.
  • Observation to cover a minimum of seven food service items and equipment. Question on the other food service items and equipment.
  • Appropriate condiments and accompaniments are stored and ready for use.
  • Simulation or questioning to cover unexpected situations.

    11. Store and keep ready for use appropriate condiments and accompaniments. (Range of condiments and accompaniments: seasonings, sugars and sweeteners, prepared sauces and dressings).

    12. Set up trays and trolleys correctly according to the appropriate cover and organisational requirements. (Range of covers: A la carte, Breakfast A la carte).

    13. Switch on equipment and ensure it is ready for use.

    14. Clear trays and store food service items and equipment.

    15. Dispose of waste and refuse in a hygienic way.

    16. Describe decisions made and give reasons for action taken in response to unexpected situations. (Range of unexpected situations: shortage/theft of service items, damaged or broken service items, faulty or broken service equipment, uncompleted work from colleagues).

    UNIT STANDARD ACCREDITATION AND MODERATION OPTIONS 
    1. Anyone assessing a learner against this unit standard must be registered as an assessor with the relevant ETQA.

    2. Any institution offering learning that will enable achievement of this unit standard must be registered with the FE/HE Registrar.

    3. Any institution wishing to receive skill development grants must be accredited with the relevant ETQA. Such an institution will also be registered with the relevant SETA.

    4. Moderation of assessment will be done by the relevant ETQA at its discretion.

    The specific outcomes are comparable to outcomes used internationally.

    We therefore structured outcomes using the format noun + verb + condition (modifying phrase)Specific outcomes have been split into three categoriesa) knowledge and understanding (what the learner must know and understand)b) decision-making and acting (what the learner must do)c) adapting performance ( including reflexive competence)In many instances there are more than six specific outcomes, as the inclusion of critical cross-field outcomes and embedded knowledge has increased the number of specific outcomes.

  • Potential exercise: Learners to discuss easier and quicker ways to transport food to guests. Learners could develop a plan to ensure that there is always sufficient service items available.

    Performance systems
  • A new employee should be able to achieve this unit within one month of being trained.
  • Ongoing measurement of the learner's ability to meet this standard is recommended.
