PURPOSE OF THE UNIT STANDARD 
This unit standard is intended for new entrants to the Wholesale and Retail field where prepared, hot, frozen and refrigerated foods are sold.
Persons credited with this unit standard will be able to maintain a safe and healthy food environment in the workplace, implement applicable legislation and prevent food from contamination while implementing temperature controls where required.

    ASSESSMENT CRITERION 1 
    Methods of identifying the presence of pets are explained and the organisations requirements in terms of reporting thereof, described. 

    ASSESSMENT CRITERION 2 
    The work area is maintained in a safe and hygienic condition using required chemicals and equipment according to manufacturer and organisations procedures. 

    ASSESSMENT CRITERION 3 
    Cleaning chemicals and equipment is stored according to health, safety and organizational requirements.

    Implement safe food handling practices.

    Applicable aspects of health and safety legislation and their purpose are explained in terms of the requirements of the organisation.

    Various forms of micro-organisms that affect food are described and the effect they have on food products is explained.

    Sources of micro-organisms are identified and how they spread is explained.

    Critical control points for food contamination are explained in terms of the operation of the organisation. 

    ASSESSMENT CRITERION 4 
    Measures to prevent contamination of food are implemented according to health, safety and organisational requirements. 


    UNIT STANDARD ACCREDITATION AND MODERATION OPTIONS 
    Programmes leading to the award of credits from this unit standard will be accredited through the Wholesale and Retail SETA, in its ETQA role. Anyone assessing a learner against this unit standard must be registered as an assessor with the Wholesale and Retail SETA ETQA.

    Moderation of assessment will be overseen by the Wholesale and Retail SETA ETQA. According to the moderation guidelines in the relevant qualification and the agreed ETQA procedures.
