PURPOSE OF THE UNIT STANDARD |
A learner who has achieved this unit standard will be competent in:
Evaluating and monitoring the dressing process of carcasses to ensure optimal quality of end product. |
LEARNING ASSUMED TO BE IN PLACE AND RECOGNITION OF PRIOR LEARNING |
To enter a learning programme for this unit standard or to be assessed against this unit standard, the learner is assumed to have:
1. Literacy and numeracy (NQF1). 2. Communication skills (NQF1). 3. A general understanding of hygiene and safety procedures in an abattoir. 4. Understanding of customer relationship. |
UNIT STANDARD RANGE |
A learner is expected to perform the specific outcomes in this unit standard with regard to species which includes but are not limited to: Cattle, Sheep, Goats, Pigs, Horses, Ostriches, Crocodiles, Game.
The learner is expected to perform the specific outcomes as reflected in this unit standard without direct supervision, but with access to work-site procedures, operating instructions and statutory requirements. Statutory requirements refer to: 1. Meat Safety Act, No 40 of 2000. 2. Occupational Health and Safety Act, No. 85 of 1993. 3. Agricultural Product Standard Act, No. 119 of 1992. And all regulations and directives promulgated there under. |

Assessors will observe, confirm and evaluate evidence that will indicate that learners have demonstrated competence in each of the specific outcomes. In this unit standard the following specific criteria should be used:
1. Reason for collecting correct evaluation forms for different species is explained. 2. The reason for determining the amount and species to be evaluated is explained. 3. Purpose of informing all relevant parties is explained. 4. Reason for identifying and reporting deviations is explained. 5. Consequences of not informing affected parties are explained. 6. Reason for evaluating slaughter process according to operational procedures is explained. |
